Blossom tint colours are powder colours which can be used in three ways. Their main use is for brushing onto sugarwork and in particular flowers. They may also be mixed directly into sugar paste, though this would be far less effective than using paste colour.
Brush onto sugar flowers to give a truly realistic appearance or to fully colour or highlight surface decoration. Powder colour can also be used to colour sugar paste, Royal icing and White Chocolate.
Blossom tint is very effectve for colouring marzipan. Knead the mixture within a plastic bag to avoid staining fingers. White moulding chocolate can also be coloured by stirring Blossom tint into the molten chocolate.
